OKS Recipe: Ultimate Chocolate Fudge Cake

Time for Choco Nom Noms!

Absolutely. Let the Choco attack begin. This is the ultimate chocolate fudge cake that you will ever eat. And the secret behind its taste is to enhance it by eating it a bit warm. So, even if you freeze or refrigerate the cake, when you have a slice of this one, trust me, heat it in your microwave at a low for 30-40 seconds. And let the warm chocolate melt in your mouth. So, now that I have tickled your senses with my words, let’s begin with the ingredients. But before that, let’s have a look at how the cake looks like to give you a fair idea of the end product.

This cake is definitely not one of those ones which can be a part of a healthy diet. But c’mon. It’s one which you have when you want to treat yourself with. Maybe on a special party or something. It is highly calorific, and extremely delicious. And now, since I have tempted you enough, here are the ingredients.

Cake Ingredients:

  • 1 Cup water
  • 250g dark chocolate
  • 250g butter
  • 2 cups caster sugar
  • 1.5 cups Self Raising Flour
  • 0.25 cups cocoa powder
  • 2 eggs, lightly beaten
  • 1 teaspoon of vanilla extract

Icing Ingredients:

  • Icing Sugar
  • Mascarpone or Sour Cream

Step 1. Grease and flour a cake tin. Bigger the better. This cake rises a lot, so make sure that the tin has high sides. The ones we used was 20 cm in diameter and 8.5 cm height. Also, preheat your oven to 160 degree C.

Step 2: Combine the water, chocolate chips, butter and sugar in a bowl which is suitable for microwave use. Melt them in the microwave until the sugar dissolves and the chocolate melts [ Should take around 6-8 minutes in low setting]. Make sure not to burn the chocolate, and so keep the microwave at a low to medium setting and keep stirring the mixture in 2 minute intervals. The final chocolate mixture should look like this.

Now let the chocolate mixture cool down to room temperature. Next, get the cake batter ready.

Step 3: Sift together the Self Raising Flour and Cocoa. Now add the Melted Chocolate Mixture in batches with continuous stirring so that no lumps are formed.

Continue doing that to make a uniform mixture which looks like this.

Step 4: Now add the 2 whisked eggs with the vanilla extract.

Step 5: Empty the bowl into the baking container which was previously greased and floured. Be efficient as I am. I repeat, DO NOT waste ANY Cake Mixture. Your life depends on it :P

Step 6: Next step is simple. Bake the cake in the Oven for a good 1 hour at 160 degree C. Do check once in between to get the awesome smell of the rising cake and the warm chocolate flood your kitchen. But most importantly, you need to keep the cake in the oven until skewers come out clean and dry. On the two occasions that I baked this cake, it has taken almost 1hr 15 minutes at 160 degree C. Slow baking is a virtue. Do not rush it. [ Old baking proverb]

Step 7: Once the skewers come out clean, take the cake out of the oven. Don’t be worried if the top is cracked. Mine was cracked a lot. But this will all be covered by the icing. Seriously though, I could eat it like this. But patience pays off. Let the cool for a while in the baking container itself, and then take out to let the cake cool further. Meanwhile, we will be preparing the icing.

:ICING:

The original recipe for chocolate fudge cake has a chocolate icing which has melted chocolate with sour cream. But due to an unfortunate chocolate burning massacre, we had to opt for an alternative which is not too bad. And it actually works fine. Here we just mix mascarpone or sour cream with icing sugar. We took 1/4 cup of Mascarpone and kept adding Icing Sugar to make a thick enough icing for the cake, so that the icing is pasty enough to spread, yet not too thin to slide on the cake surface. The consistency of the icing should like this.

Once the icing is ready, apply the icing on the cake. Now I am no expert in icing. So I just took the spoon, and applied it all over. It works for me. Thick icing on the cake.

Once the icing done, your cake should look like this. If it doesn’t you’ve definitely done it wrong :P
